This unpeated single malt was produced from the 2011 harvest of heritage bere barley supplied by the Agronomy Institute of Orkney College. Bere Barley is a six-row heritage variety that has long since been forgotten from the modern world of standardised whisky making.

 

Matured for 10 years in first fill ex-bourbon casks, this 2012 vintage delicately balances an unctuous texture and malty, sweet fruit flavour.
