Secret Distillery #11 15 Year Old Batch 1 (That Boutique-y Rum Company)

A long aged cask of C<>H marque Jamaican Pot Still Rum is a thing of wonder. You may, or may not agree that high ester blending marques are the ideal choice for drinking undiluted, but the world is a better place for having the choice. Highly desirable, and a ‘must have’ for Rum enthusiasts.

C<>H is a high ester marque in the range of 1300-1400 gr/HLPA as distilled. A rare marque due to its extreme intensity. The production ‘recipe’ calls for a medium molasses content, high cane juice vinegar and dunder addition, medium water content, and high muck addition. 10 days of alcoholic fermentation, 10 days of dead wash, for a total of twenty days, with the wash being around 2-4% ABV. Double retort pot distilled. Aged continentally in ex-bourbon cask for 15 years and bottled at cask strength.

We can’t say who made it as such - not in writing - but perhaps the distillation marque gives it away?

Nose: An overload of pineapple, green banana, and tart Victoria plum. Green sugarcane bark, rich sultanas, and a sweet biscuit crumb base!
Palate: Lots and lots (and lots) of underripe pineapple, zesty lemon peel, more green sugarcane bark. We mentioned the underripe pineapple right?
Finish: Still wallowing in lots of underripe pineapple and green sugarcane notes. A little jasmine florality interweaves. Delicate grip.
